Market Heirloom Chicken Eggs

Description

The varied natural diet of free-ranging chickens (guarded by Great Pyrenees and stay in a coop at night) allow them to pack a lot more nutritional value into their eggs, which is mainly concentrated in the yolk. This is why the yoke is darker than a yoke from a store bought egg. In addition to the extra omega-3 fats, vitamin D and vitamin E, natural eggs contain more iodine, vitamin A as well as two important B vitamins -- folate, the natural form of folic acid, and vitamin B-12. Natural eggs also deliver more lutein and zeaxanthin, two antioxidants important for eye health.

We raise several different breeds of heirloom chickens to get a variety of colors in our egg shells. All eggs have a natural protective coating on the shell called the bloom, prior to washing. This coating seals the eggshell pores so harmful bacterial cannot enter the egg, it also reduces moisture loss for the egg. These eggs are sold at the Farmer's Market after being washed and refrigerated.
