Description
Watermelon radish is an heirloom variety of the Chinese daikon radish with a creamy white or light green skin and a magenta pink interior. While it has the slight spice of the daikon radish, it has a juicy, crisp flavor; this has makes it a favorite in salad bowls and sandwiches. Radishes have a rich nutrient profile as they are high in calcium, potassium, folate, vitamin C, and are a good source of fiber. Radishes also contain active bio compounds like glucosinolates, isothiocyanate, and phenols.
Radish is best eaten sliced thin and raw in salads, sandwiches, or included on charcuterie boards.
