The largest of the Oyster mushrooms, King Oysters (a.k.a. Trumpet Oyster) are sought for their meaty texture and umami flavor. They can be sliced or torn into thick pieces and simmered or braised to create a crispy texture, or they can be cut into rounds to develop a tender, meat-like consistency that is often likened to abalone or scallops. King Oyster mushrooms provide antioxidant support to the immune system and carries a statin called Lovastatin that helps to lower blood cholesterol levels.
