Description
Beef shank is a lean, flavorful cut that should be cooked low and slow. There are several ways to accomplish this, whether by braising, smoking, or sous vide, but they all require long cooking in moist heat. Beef shank makes glorious stews, succulent barbecue, and even excellent beef jerky. These whole shanks are 9-10 pounds each. All of our beef is dry aged for 15 days prior to being cut. Our livestock are born and raised in Northwest Georgia on pasture with free access to a nutritionally balanced feed mix alongside loose minerals and vitamins.
