Description
Scapes are one of nature’s marvels that doesn’t see a lot of use on the modern table. Scapes are the flowering body of garlic, and they appear 2-4 weeks before garlic is ready to harvest. You remove the scape so that the plant puts its energy into growing large tasty garlic for later in the season. They taste somewhere on the mild garlic side of an onion/garlic mix.
We sell them in groups of about a dozen. What can you do with scapes? I use them frequently in soups, eggs, or scape pesto! We freeze the scape pesto for use throughout the year, and chuck it in with some rotini and English peas from the garden. Even if I make a double batch, the kids polish off every garlic-y morsel.
