English Peas

English Peas are the whole peas that come in the shell. The shell tends to be fibrous, so most people don’t eat them, but the treasure inside the shell is the tiny green peas that you can get in the frozen isle at the store. Don’t mistake those frozen kernels for garden peas. Fresh they are sweet and my family eats them raw in curried peas…or just straight out of the pod.
What is curried peas? Take about 2 cups of peas and mix in 2 tablespoons of mayonnaise (or 1 tbsp of mayonnaise and 1 tbsp of sour cream as well). Add in 1/2 tsp of curry powder and 5 chopped mint leaves. The result is curried peas! I sometimes vary the amount of mayonnaise, or the spices after tasting. In the winter, I’m not a huge fan of mint in my salad…so I will use red pepper flakes or add cumin to the curry powder.
