💚 Natural flavors: Peppery and slightly bitter, milder and more delicate than mustard or wasabi despite being in the same family. The peppery "bite" comes from glucosinolates breaking down into isothiocyanates (notably PEITC) when leaves are cut or chewed — watercress is the richest known natural source of PEITC. The purple cultivar has the same flavor as green watercress; its color intensifies in cooler weather and can fade in heat or shade.
